Exotic Mushrooms and Caramelized Shallots

Very easy dish to make with one packet of The Fresh Market's Exotic Blend of Mushrooms




I've been eyeballing this gorgeous mushroom mix sold by The Fresh Market for weeks. They call it Exotic Blend and they sell it in the produce department alongside the other fresh packaged mushrooms.



It's a 4 ounce mixture of earthy and smokey shiitakes, delicate and nutty golden oysters, and meaty baby bellas. They're so beautiful in the package. I've been racking my brain to figure out how to cook them in a way that wouldn't compete with or cover up their unique flavors.


This is what I came up with.


Exotic Mushrooms and Caramelized Shallots


Ingredients

1 T thinly sliced shallots

1 T unsalted butter

1 4 oz package of The Fresh Market's Exotic Mushroom Blend

Salt and freshly ground black pepper

1 tsp flour

1/2 C half and half

2 tsp freshly squeezed lemon juice

1 tsp fresh lemon thyme


Directions

1. Melt the butter in a small (8 inch) frying pan over medium heat. Cook the sliced shallots until golden brown. Remove with a slotted spoon or fork and drain on a paper towel. Leave the remaining butter and any brown bits in the pan.

2. Add the package of mushrooms to the pan. Salt and pepper them as you desire. Cover and cook, stirring once, 3 - 4 minutes until the mushrooms give up their water.

3. Uncover and cook for about one additional minute. Add in 1 tsp of flour and stir to coat for about 30 seconds.

4. Add half and half 1/4 cup at a time and allow the mixture to thicken. Stir in the lemon juice and thyme.

5. Serve alone or over toasted bread or pasta.


As a pasta dish, this makes one serving. Two servings if served as a side dish alone. Spooned over toasted bread, this could serve four.
